You know, It’s funny, my boyfriend is Hispanic and always laughs about enchiladas with cheese in them. You might need a bigger pan, or two smaller pans as you’ll likely have a bit of extra filling. They lived up to the pictures- packed with flavor and so satisfying (even for meat-eating fathers). This looks too good to eat!! mmm…enchiladas are my favorite meal!! I used organic enchilada sauce from a jar, but next time I am going to try making my own enchilada sauce. Thank you so much! I made the cookbook version last night (which is the same as this one?) I am OCD about incorporating protein at every meal and for some reason can’t quite qualify a bean-based dish to sort this particular demon in my head…, But with such amazing ideas, the idea at least is getting easier…. Which meant the odds of me ever making sweet potato black bean enchiladas were slim to none.

This recipe is delicious. I used a pasta sauce so I likely needed more seasonings to achieve the taste I desired. Thanks for sharing the recipe. I used zucchini instead of sweet potatoes and two kinds of bell peppers as well as hot portugal peppers from the farmer’s market. I could eat these everyday.

Tonight we are having the empowered noodle bowl with orange miso dressing and I’m adding baked tofu for some extra protein. The sauce has so much flavor and is the perfect spicy and creamy sauce to marry all of the different flavors in this dish.

Once it was finished, I served it like pieces of pie with the avocado sauce on the side. I did substitue rice tortillas for the wheat ones. I think bob’s red mill makes nutritional yeast!

Is it just me or is this recipe missing the enchilada sauce recipe? You can splash a little water on them before microwaving to make them more pliable. And ate more than all of us!! Since I love tacos, but don’t make them at home nearly enough, I decided that Jessica’s Butternut Squash Black Bean tacos were going to happen on the blog. Thanks. To store the avocado sauce, take a piece of plastic wrap and push down directly on sauce to get the air out, then seal with an airtight lid, this will keep the sauce from turning black, I do this when I make guacamole. I have made several vegan black bean/sweet potato enchiladas and I believe this is the best one, for our taste buds, thus far.
